Coppia Ferrarese IGP
Back in 1287 the Statutes of Ferrara set forth that bakers were to make bread with “edging” so as to give it a more refined and less rough appearance. The coppia ferrarese, in dialect "ciupeta", remains the only type of bread in the region with the "Protected Geographical Indication" title. According to regulations, it is made with soft wheat flour, water, pure pork fat, extra virgin olive oil, natural leavening, salt and malt and has a thick central body from which four twisted and tapered horns branch off. It is a particularly crunchy type of bread with small soft part.
